  • What is Kombucha?
    Kombucha, as one of the popular drinks of recent years, is a fermented product that first became widespread in China, traditionally using black or green tea [Camellia sinensis (L.) Kuntze] as substrates. When it started to become popular in Japan, it was named “kombucha” created with the combination of the word “kombu” and “cha”, meaning algae and tea, respectively. Kombucha is commercially sold as a tea-type beverage in markets, while it can ben also prepared at home. In tradi-tional way of preparation, black or green tea is fermented with 5–10% sucrose (Emiljanowicz & Malinowska-Panczyk, 2020; Massoud et al., 2022). According to its standard practice, black or green tea is left to infuse with sucrose, is filtered, kombucha liquid obtained from the previous production is added. This liquid is a biofilm called “mother” or “SCOBY” (Symbiotic Community of Bacteria and Yeast), which is a mixture of bacteria, especially from Acetobacteraceae family (Aceto-bacter aceti, A. estunensis, A. pasteurianus, Gluconobacter oxydans, Komagataeibacter kombuchae, K. rhaeticus, and K. xylinus), Lactobacillus sp. as well as osmophilic yeasts (Brettanomyces/Dekkera, Candida, Saccharomyces, Schizosaccharomyces, Starmerella sp., Torulopsis, Pichia sp., and Zygosaccharomyces) (Kaashyap et al., 2021; Tapias et al., 2022).
  • How to store Kombucha?
    Kombucha must be stored in the refrigerator at a temperature of 2-4C. In the case of long-term storage, as well as short storage in a warm bottle, a precipitate may form and the Scoby mushroom will begin to form. Your Kombucha hasn't gone bad. Just strain it.
  • If there is sediment or Scoby mushroom in Kombucha?
    Our Kombucha is unpasteurized and alive. The fermentation process continues in the bottle even at low storage temperatures. Therefore, in any case, the Scoby mushroom begins to grow over time. You can simply strain the Kombucha and drink it with pleasure. Or you can start making your own Kombucha using your little mushroom baby.
  • Can our Kombucha get spoiled?
    In our practice, Kombucha has never spoiled. As a result of being warm for a long time, Kombucha tea turns into Kombucha vinegar. It has the same valuable properties, only it has a strong concentration. On very rare occasions when storage is not handled by our suppliers, Kombucha in open containers becomes cloudy and smells very bad. Such Kombucha should be poured out immediately, and the container should be very well disinfected or even better thrown away.
  • What to do if Kombucha has become too acidic and concentrated?
    If the kombucha is too sour for you, don't rush to pour it out. She continues to be good and helpful. There are 2 ways what to do: 1. You can add some sweet tea with sugar to sour kombucha. 2. You can pour your Kombucha into a wide-mouthed container, seal the throat tightly with a cloth, and leave in a dark, warm place for several months. After 3-4 months, a beautiful Scoby mushroom will grow in a jar, and Kombucha will turn into a very useful quality Kombucha vinegar.
  • Special conditions and delivery times
    Terms and conditions of delivery are determined by the specifics of the production and storage of Kombucha. We always (!) send you only fresh Kombucha on Thursdays. Place your order before 12:00 on Friday and you will receive it next Saturday in the morning. In the case of purchasing a subscription, you always receive your order on Saturdays in the first half of the day. Please consider delivery times when planning your Detox Program.
